It all started a very long time ago, when I was very young and my grandparents who introduced my parents, who introduced me to these delicious flavors and textures from cured meats...
It all came to fruition while I was getting meats and thought of the love and knowledge I had of meats (even though it was vague), then decided to get more into curing, aging and making of these meats.
